Ingredients

The Chicken & Marinade

  • 2 boneless, skinless chicken breasts (pounded to even thickness)

  • 120ml buttermilk (or 120ml milk + 1 tsp lemon juice)

  • 1 tsp garlic powder

  • 1/2 tsp smoked paprika

  • Salt and black pepper to taste

The Crispy Coating

  • 60g all-purpose flour

  • 30g cornstarch (the secret to extra crunch)

  • 1/2 tsp baking powder

  • Vegetable oil (for shallow frying)

The Build & Toppings

  • 2 high-quality burger buns (Brioche or Kaiser rolls work best)

  • 2 thick slices of sharp Cheddar cheese

  • 1 small red or yellow onion (sliced into thin rings)

  • 4 tbsp of your favorite smoky BBQ sauce

  • 2 tbsp butter (for toasting the buns)

Step-by-Step Instructions

1. Marinate the Chicken

  1. In a bowl, whisk together the buttermilk, garlic powder, smoked paprika, salt, and pepper.

  2. Add the chicken breasts, ensuring they are completely submerged. Let them marinate for at least 15 minutes (or up to overnight in the fridge).

2. Get the Buns Extra Crispy

  1. Melt the butter in a skillet over medium heat.

  2. Place the burger buns cut-side down and toast until they are golden brown and have a distinct, crispy edge.

  3. Remove and set aside. Pro tip: Toasting creates a barrier so the BBQ sauce doesn't make the bun soggy.

3. Coat and Fry

  1. In a shallow dish, mix the flour, cornstarch, baking powder, and a pinch of salt.

  2. Remove the chicken from the buttermilk, letting the excess drip off, then dredge it thoroughly in the flour mixture. Press the flour into the chicken to create those craggy, crispy bits.

  3. Heat about 2 cm of vegetable oil in a heavy skillet over medium-high heat.

  4. Carefully add the chicken. Fry for about 4–5 minutes per side until the crust is deep golden brown and the internal temperature reaches 74°C (165°F).

  5. The Cheese Melt: During the last minute of cooking, place a slice of cheddar cheese directly onto each chicken breast. Cover the skillet with a lid for 30 seconds to let the steam perfectly melt the cheese.

4. Build Your Burger

  1. Spread a generous tablespoon of BBQ sauce on the bottom crispy bun.

  2. Place the cheesy, crispy chicken breast on top.

  3. Layer on the raw onion rings (or quick-sear them in the pan for 1 minute if you prefer them slightly softened).

  4. Drizzle more BBQ sauce over the onions.

  5. Crown it with the top bun and press down gently.
